Roasted Chayote Squash
Ingredients
4 chayotes
2 garlic cloves, mashed
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon coriander
1 teaspoon salt and pepper
½ lemon, juiced
1 Tablespoon olive oil
2-3 Tablespoons coconut oil
Instructions
Preheat oven to 450˚. Mist a cookie sheet with non-stick spray.
Combine chili powder, cumin, crushed garlic, coriander, salt and pepper into a small dish and set aside.
Peel chayote. Cut in half lengthwise and remove seeds.
Cut into wedges and sprinkle/rub evenly with the spice and garlic mixture. Place wedges on a cookie sheet and brush lightly with coconut oil.
Roast 20 minutes, flip wedges, and roast for an additional 10-15 minutes, or until golden brown and tender.
Drizzle with lemon juice and olive oil and serve immediately.
