Stir Fry Tatsoi with Mushrooms

INGREDIENTS
1 bunch of Tatsoi (alternatively, Bok Choy or Chinese Broccoli)
3 cloves garlic, finely minced
3-5 oz cup fresh mushrooms, sliced
7 oz roasted or baked tofu (optional, for added protein)
Salt and freshly ground black pepper, to taste
INSTRUCTIONS
Prepare the Tatsoi – Thoroughly wash the Tatsoi to remove any dirt or grit. Separate the stems from the leaves. Chop the stems into bite-sized pieces and set aside. Roughly chop the leaves and keep them separate.
Sauté Garlic and Mushrooms – In a large skillet or wok, heat a small amount of oil over medium heat. Add the minced garlic and sauté briefly until fragrant, taking care not to let it brown. Add the mushrooms and cook for a few minutes until they begin to soften.
Incorporate Tofu (Optional) – If using tofu, add it to the skillet with the mushrooms. Stir to combine, then cover the pan and reduce the heat to low-medium. Allow the mixture to steam gently, helping the flavors meld together.
Add Tatsoi Stems – Introduce the chopped Tatsoi stems to the skillet. Stir to combine, then cover and cook for 3–5 minutes until the stems become tender.
Add Tatsoi Leaves – Add the Tatsoi leaves to the skillet. Stir to incorporate, then cover and cook for an additional 2–3 minutes.
Season and Serve – Season the stir-fry with salt and freshly ground black pepper to taste.
