Lion's Mane Mushroom Soup Recipe
Cook time: 15-20 minutes
Serving Size: This recipe serves 1-2 people
Ingredients
1 large Lion’s Mane mushroom
2 eggs
Thinly sliced ginger
Approx 1-2 tbsp corn powder starch
2 cups water
1 tbsp Sesame Oil
1 small slice of carrot
2 tbsp chopped scallion
Salt to taste
Pepper to taste
Optional: chili powder to taste
Instructions
Break Lion’s Mane into small pieces after washing with warm water
Crack 2 eggs into a bowl & whisk briskly
Heat sesame oil in a pan
Add sliced ginger to the heated oil
Add a slice of carrot
Add water
Add Lion’s Mane mushroom
Add salt and pepper to taste, and stir well
Let it boil until the mushrooms cook thoroughly
Add a tablespoon of corn starch as a thickener, stir well
Lower heat to “low”, pour in the eggs and stir well
Stir in 1 tbsp chopped scallion
Serve in bowls, garnish with remaining chopped scallions
Option to add chili powder for a spicy flavor
