Persimmon Salsa
INGREDIENTS
1/4 cup red onion, finely diced
1/2 jalapeno, chopped ( or to taste)
2 tablespoon lime juice, more to taste
1/4 teaspoon salt
3–4 Persimmons, diced (about 2 cups)
1/2–1 cup cilantro, chopped
1/4 –1/2 cup pomegranate seeds optional)
INSTRUCTIONS
Finely chop the onions and jalapeno and place in a bowl.
Toss with the lime juice and salt.
Dice the persimmons
Chop the cilantro
Toss persimmons and cilantro with the onion mixture.
Adjust salt and lime, add more to taste.
Garnish with pomegranate seeds (optional)
Serve as you would pico de gallo with tortilla chips, on tacos, and more!
