Persimmon Salsa

INGREDIENTS

  • 1/4 cup red onion, finely diced

  • 1/2 jalapeno, chopped ( or to taste)

  • 2 tablespoon lime juice, more to taste

  • 1/4 teaspoon salt

  • 3–4 Persimmons, diced (about 2 cups)

  • 1/2–1 cup cilantro, chopped

  • 1/4 –1/2 cup pomegranate seeds optional)

INSTRUCTIONS

  • Finely chop the onions and jalapeno and place in a bowl.

  • Toss with the lime juice and salt.

  • Dice the persimmons

  • Chop the cilantro

  • Toss persimmons and cilantro with the onion mixture.

  • Adjust salt and lime, add more to taste.

  • Garnish with pomegranate seeds (optional)

  • Serve as you would pico de gallo with tortilla chips, on tacos, and more!
