Savory Herbed Grits

Serves 4

INGREDIENTS

• 1 cup stone-ground grits

• 4 cups water (or use half water, half milk for creamier grits)

• 1 teaspoon salt

• 2 tablespoons butter or olive oil

• ½ cup grated Parmesan or sharp cheddar (optional)

• 1 tablespoon fresh sage (chopped) or 2 tablespoons fresh cilantro or fennel fronds (chopped)

• ½ teaspoon black pepper

• ½ teaspoon red pepper flakes (optional)

INSTRUCTIONS

1. Boil & Simmer: In a medium saucepan, bring water and salt to a boil. Slowly whisk in the grits. Reduce heat to low and cook, stirring frequently, until thick and creamy (about 20-25 minutes).

2. Add Butter & Cheese: Stir in butter and cheese (if using) until melted and smooth.

3. Fold in Herbs: Mix in the fresh sage, cilantro, or fennel fronds. Cook for another 2 minutes to blend the flavors.

4. Season & Serve: Adjust salt and pepper to taste. Serve warm, garnished with extra herbs and a drizzle of olive oil.

SERVING IDEAS

• With eggs & greens: Top with a poached egg and sautéed spinach.

• With roasted vegetables: Serve alongside roasted sweet potatoes, mushrooms, or zucchini.

• With shrimp: Make shrimp and grits by sautéing shrimp with garlic, butter, and a splash of lemon.
