Yellow Lentil Soup

INGREDIENTS

  • organic red lentils lentils,

  • organic golden harvest lentils,

  • organic curry powder,

  • organic onion powder,

  • organic paprika,

  • organic Himalayan salt,

  • organic garlic powder,

  • organic black pepper,

  • organic turmeric,

  • organic ginger,

  • organic cumin,

  • organic coriander,

  • organic coconut milk powder

  • (organic tapioca maltodextrin, organic gum acacia fiber)

INSTRUCTIONS

  • In a pot, add mix and 3.5 cups water or broth.

  • Bring to a boil then reduce heat to a simmer.

  • Cook for 10 to 15 minutes, stirring occasionally, until lentils are soft and curry has thickened.

  • Stir in 2 tablespoons lemon juice.

  • Optional step, stir in chopped greens and roasted sweet potato.

Serve with rice and enjoy! For extra flavor, sauté a diced yellow onion before adding mix in. For better digestion, soak lentils before.
